I can't imagine no one has made this before, but I'd never heard of it.
Leftover Grits Scramble
2 cups leftover grits
1/4 cup chopped Smithfield ham
1 finely chopped green onion
handful of cherry tomatoes, cut in half
handful of grated or finely chopped cheese of your choice (I used manchego)
2 eggs whisked with a dollop of whole milk, or even better: half & half
For extra yumminess, use bacon grease to heat up the grits in your pan on medium-high heat. Once it has gotten warm, add ham, onion, tomatoes. Stir it around until it's all warm and then push everything to the side to make a well in the center. Add a little more bacon grease and then pour in the eggs. Scramble them nearly all the way and then mix everything together. Sprinkle cheese on top and then put on the lid while you pour the coffee and get out bowls. Doesn't need any additional seasonings except for maybe some ground pepper.
